The Origin Story of Pluma Hidalgo
A Town Born for Coffee
Unlike most Oaxacan towns, which were pre-Columbian indigenous settlements, Pluma Hidalgo is unique — it was founded specifically with the aim of growing coffee over 150 years ago. This is a powerful origin story: the town itself exists because of coffee.
A "Pueblo Mágico": Pluma Hidalgo is officially recognized as one of Mexico's pueblos mágicos (magical towns), nestled at approximately 1,300 meters elevation in the Sierra Madre del Sur mountains. Visitors describe it as a place that "feels magical, in every possible way — exuberant vegetation, with dangerous but oh so beautiful roads full of curves, the sounds of nature echoing in every corner".
The Pluma Variety — A Coffee Shaped by the Land
One of the most compelling stories to highlight is that Pluma Hidalgo became its own coffee variety after undergoing several decades of natural selection — adapting to the arid mornings and cool afternoon breezes of the Sierra Madre del Sur mountain range. The land literally shaped the coffee into something unique.
What makes it special :
Shade-grown under natural cloud cover in volcanic soil
Cultivated using only organic composts of leaves, coffee parchment, and fruit
Produces a particularly fragrant coffee desired for its complete flavor profile as a stand-alone single origin
The Pluma variety has earned its own designation of origin — a formal recognition that this coffee's character is inseparable from the geography, soil, and climate of Oaxaca
The Rise, Fall, and Rebirth
This is perhaps the most emotionally resonant story for the brand:
The Golden Era (late 1980s–early 1990s): Pluma gained a widespread reputation for producing exceptional quality coffee.
The Decline: A devastating combination of low market pricing and la roya (coffee leaf rust) saw estate holders abandoning their farms and moving on to more lucrative ventures. The region's coffee legacy was nearly lost.
The Rebirth: Today, Pluma is experiencing a renaissance — an "origin reborn" — with a new generation of farmers reclaiming their heritage and proving that Pluma coffee belongs among the finest in the Americas.
Cielo Azul is part of this rebirth story. Every bag you buy helps write the next chapter.
